Trout Fillet is supplied from Vågen Seafood, Øygarden (wild-caught). At Havøyet we fillet and pack all fish and seafood ourselves. It arrives from Domstein at the fish quay in Bergen and is driven out to you on ice the same day. We never accept produce we would not serve ourselves.
Trout Fillet belongs to Havøyet's selection of red fish: salmon, trout, Arctic char and mountain trout. Red fish is rich in omega-3 and has a fuller, more pronounced flavour than white fish. It suits pan-frying, baking, curing, smoking, and sushi and sashimi. Norwegian health authorities recommend fish like salmon and trout 2–3 times a week.
