Scallops is supplied from Lokalt fangstet, Øygarden (wild-caught). At Havøyet we fillet and pack all fish and seafood ourselves. It arrives from Domstein at the fish quay in Bergen and is driven out to you on ice the same day. We never accept produce we would not serve ourselves.
Scallops is part of Havøyet's shellfish selection: crab, lobster, prawns, blue mussels, scallops, oysters and langoustine from Norwegian waters. Fresh shellfish is best prepared the same day or the day after delivery for optimal taste and texture. Everything is delivered on ice to keep the cold chain intact.

Norwegian scallops (Pecten maximus) are one of Western Norway's finest shellfish, a large, sweet and delicate muscle with a mild taste of the sea. Wild-caught from Norwegian fjords.
Pat the scallops dry thoroughly. Fry over high heat in butter and oil, 1–2 minutes per side until golden. Season with salt and pepper. Overcooking ruins the texture, they should be soft and glassy inside.
Scallops à la plancha with pea purée and crispy Parma ham is a classic. They also work well in risotto, pasta, or as an elegant starter with cauliflower cream.
