Origin and quality

Halibut Fillet is supplied from Nord-Norge / Nordic Halibut, Kristiansund (wild-caught). At Havøyet we fillet and pack all fish and seafood ourselves. It arrives from Domstein at the fish quay in Bergen and is driven out to you on ice the same day. We never accept produce we would not serve ourselves.

How do I cook halibut fillet?

Fry in butter over medium-high heat for 3–4 minutes per side. Don't overcook it, halibut is best when still slightly translucent in the middle. Try serving it with a simple butter sauce and fresh herbs.

Why is halibut so expensive?

Atlantic halibut is wild-caught, grows slowly and is seasonal (best from April to December). Its limited availability, exquisite flavour and high demand are all reflected in the price.

Is halibut in season all year round?

Halibut is at its best from April to December. In winter (January–March) it is out of season for us.
